Farina Bona: toasted Swiss corn flour from the Onsernone Valley
Made in the Onsernone Valley, farina bona is one of Ticino’s oldest specialities. The maize is gently roasted, then stone-ground into a fine flour that smells of popcorn and warm caramel.
A little goes a long way. Stir it into ice cream, mousse and custards, fold it through pancake or biscuit batter, or blend it with other flours for homemade bread and pasta. Naturally gluten-free, it adds a warm, nutty sweetness to everyday baking.
